These thin slices of Jamón Ibérico by Montaraz come from Ibérico pigs that are pasture-raised. The beautiful marbling and the rich, complex flavor are signatures of fine Spanish Ibérico ham.
Unlike many Spanish Ibérico hams, this jamón is made from from only pasture-raised pigs. The animals spend their days wandering the countryside grazing on grass, grains and a few acorns. Nitrates or other preservatives are never used in the curing process. The only higher-grade ham available is the Jamón Ibérico de Bellota, which comes from Ibérico pigs that feed on acorns or ‘bellotas’ during the acorn season or ‘montanera.’
Montaraz is part of the DOP Extremadura. From sourcing the pork to the final packaging, every step of the process is supervised by a regulatory board to maintain the highest quality products.
Montaraz has aged fine Ibérico hams in western Spain since 1890. Four generations of family expertise goes into each of their products.
