Broad Beans with Serrano Ham Recipe

We remember falling in love with this dish in Santiago de Compostela. It is very simple to prepare but the ingredients complement each other beautifully. If possible, try to find long, flat green beans, usually available in the summer. Otherwise fresh string beans will do. This is a great side dish for any meal.

How To Cook

STEP 1

In a large saucepan, bring 2 quarts of water to a boil. Add the beans and boil for 5 minutes. Strain beans and shock in a bowl of cold water to stop the cooking process. Drain cooled beans well. 

STEP 2

Add the olive oil to a skillet over medium high heat. Sauté the beans until lightly browned, about 5 minutes. Lower heat to medium, add the garlic, onion, paprika and ham, and cook stirring occasionally for 10 to 15 minutes until the beans are tender. Add a splash of sherry vinegar and salt to taste. Serve with toasted crusty bread.

You can now find frozen "Italian" green beans in some supermarkets. I used to freeze beans from the farmers markets in the summer (una pesadez!), now I have a freezer full and they are, practically, as good as the fresh ones. Also indispensable for paella and arroces. By the way, ¡la receta... excelente! Peas can also be used for this recipe.
